These spice rubbed chicken skewers cook in about 10 minutes on the grill (in the broiler or on the stove) and the sauce is 5-ingredients stirred together! I usually serve the skewers with cilantro rice, I'll include the recipe for that too.
1teaspoonadobo seasoning with pepper(or garlic salt)
1teaspoonsmoked paprika
1/8teaspooncayenne pepper(optional)
1-1 1/4poundsboneless skinless chicken breasts(1 regular pack), cut in 1-1 1/2 inch pieces
1/2sweet onioncut in 1-1 1/2 inch pieces
1red bell peppercut in 1-1 1/2 inch pieces
2tablespoonslight olive oilplus extra for rubbing grill grates
For the Sauce:
7ounces2% plain Greek yogurt(the Fage brand I used has a 7-ounce cup)
1/2teaspoongarlicfinely minced or pressed
1tablespoonlime juice
1/2teaspoonsalt
1/2teaspoonpepper
For the Cilantro Rice:
4cupshot cooked brown rice(I used the frozen microwave variety)
1cupcilantroroughly chopped
1/2teaspoonfresh garlicchopped
1/2teaspooncumin
1tablespoonjalapenominced
2tablespoonslime juice
1teaspoonsalt
1/4teaspoonpepper
1/2cupolive oil
Instructions
Soak the bamboo skewers in a shallow dish of water for about 30 minutes. (Freeze some extra soaked skewers in a zip top bag and you'll always have some ready.)
Preheat grill to high heat.
Mix the brown sugar and spices in a bowl. Toss the chicken pieces in the spice rub.
Thread the chicken onto the skewers alternating with onion and pepper pieces.
Drizzle the prepared skewers with 2 tablespoons olive oil.
Reduce grill heat to medium. With long tongs, rub the grill grates with a wadded paper towel dipped in a little olive oil. Be careful of flame-ups.
Grill the skewers for about 8-10 minutes turning twice or until chicken is cooked through.
I usually use an instant read thermometer to check for about 170 degrees.
