Equipment
- 1 electric mixer makes it easy to whip up the cream cheese
Ingredients
- 8 ounces cream cheese (I use Philadelphia brand) Room Temperature
- 16 ounces sour cream
- 1 ounce packet ranch or taco seasoning I like both or a combo!
- 10 ounce can Rotel (diced tomatoes and chilies) drained
- 11 ounce can corn drained
- 2 cups shredded cheddar 8-ounce package
- 1/2 cup cooked and chopped bacon about 8 slices
- 2 tablespoons sliced chives or green onions
Serve with your favorite dippers! I like tortilla, potato or corn chips!
Instructions
- In large bowl, beat cream cheese until smooth. I find it helpful to use an electric mixer to get out all the lumps. I use my KitchenAid hand or stand mixer with flex edge beater(s).
- Add sour cream and mix until smooth. Add all other ingredients and mix until well combined.
- Refrigerate for several hours or overnight. Can be made 2-3 days in advance.
