Cold Noodle Salad:
Cook your favorite noodle until al dente. Drain and rinse until cool. Toss with some neutral oil and a little soy sauce. Combine with your favorite protein and veggies. (We love it with shredded chicken, the texture really grabs the sauce!) Drizzle with the dressing and top with chopped peanuts and cilantro!
Peanut, Soy and Ginger Sauce/Dressing

Equipment
- 1 blender, chopper, small food processor or whisk
Ingredients
- 1/2 cup creamy peanut butter
- 1 lime, juiced
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon grated fresh ginger
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 2-4 tablespoons water
- Add some of your favorite chili or hot sauce/paste for a little spice.
Instructions
- I find it easiest to blend this smoothly in a chopper, small food processor or blender. (But you can whisk by hand.)
- Blend all ingredients to combine. (starting with 2 tablespoons water – add more for desired consistency.)
- Store in the refrigerator for up to a week.
