A Moist and Delicious Cake from 3-Ingredients!
This is such a fun way to make a boxed cake mix. Instead of adding the typical the water and oil to your cake mix, you add melted ice cream along with some eggs. Think of all the flavor combinations you can try!!
Any flavor cake mix + any flavor ice cream = A moist and delicious cake with endless flavor possibilities!
For the ice cream, you need 2 cups melted. Most pints of ice cream will yield 2 cups when melted, unless it’s a variety that whips a lot of air into their ice cream. If your pint falls short a little, just make up the difference with some milk, cream or water. I have made this recipe into Bundt cakes. cupcakes, sheet cakes and layer cakes.

Melted Ice Cream Cake Recipe
Ingredients
- 1 box (15.25 ounces) cake mix any flavor
- 2 cups melted ice cream any flavor
- 3 large eggs
- non-stick baking spray with flour if using a pan (use paper liners for cupcakes)
Instructions
- Preheat oven to temperature listed on cake mix box. Prepare your cake pan with non-stick baking spray (the kind with the flour) or use cupcake liners for cupcakes
- In large bowl, mix together cake mix, melted ice cream and eggs.
- Pour into your desired baking pan and bake for the time listed on the cake mix box.

Can this be frozen?
Hi Amy – Yes this cake freezes well after baking/cooling. I usually wrap in plastic wrap and then in foil. Then thaw and use within a few months.
Your recipes are terrific.
I caught the end of tonight’s QVC demo of ths cake. You used peppermint candy mixed into the batter and sprinkled on top. It looked really delicious.
What flavor cake mix and ice cream did you use as the base?
Also, could the recipe be halved for a 6 inch bundt pan?

Hi Maya – I used red velvet cake and melted vanilla ice cream I added in peppermint bark morsels. I haven’t tried that size bundt cake, but I’m sure you could. I would just bake with a baking sheet underneath in case any cooks over the top. And any extra batter could be baked in a smaller baking dish.
I am making a cake today using Devil’s Food Chocolate Cake Mix with Peppermint Stick ice cream. I have cream cheese frosting or should I use something else? Any help is greatly appreciated!
That sounds delicious! The peppermint flavor probably won’t be too strong once mixed with the other ingredients. I love cream cheese frosting! You could sprinkle some crushed peppermint candies on top??
