Take advantage of the bounty of garden tomatoes right now! Make a classic tomato sandwich on toast with juicy sliced tomatoes, homemade mayonnaise and a sprinkle of salt and pepper. mmm!
When making the mayonnaise, you’ll need to whisk vigorously while drizzling in the oil to emulsify the mixture. The whisking can be done by hand, in a blender, with a hand blender, in a food processor or chopper. I use my KitchenAid 5-cup Chopper with Whisking Accessory.
Homemade Mayonnaise - (eggless)

Servings: 1 cup (approx.)
Ingredients
- 1/4 teaspoon finely minced garlic
- 1/3 cup milk
- 1 teaspoon dijon mustard
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon sugar
- 1-2 teaspoons hot sauce I used Sriracha
- 3/4 cup oil I use canola, avocado or olive
Instructions
- You'll need to whisk this vigorously while drizzling in the oil to emulsify the mixture. It can be done by hand, in a blender, with a hand blender, in a food processor or chopper. I use my KitchenAid 5-cup Chopper with Whisking Accessory.
- Add all ingredients except oil to bowl or vessel and mix together. Drizzle in the oil slowly while whisking the mixture. (If using a Chopper or Food Processor use the drizzle hole to control the flow of the oil.)
Notes
You can easily add fresh herbs, pestos, roasted red pepper to flavor your mayonnaise. Store refrigerated for up to a week.
