Chicken Corn Chowder
Fall is the perfect time of year to make Chicken Corn Chowder – the weather is cooler and there’s always end-of-season corn on sale in the markets or at the farm! I love this soup as it’s chock full of fresh veggies, tender chicken and of course tons of corn flavor! Like other chowders, this soup is broth based and finished with a touch of cream. I top it with a sprinkling of crispy bacon and some fresh parsley.
PB and J Oat Crumble Bars (+ nut free version)
2,160 peanut butter & jelly sandwiches… My poor Mom, she made me a PB&J almost every day of elementary, middle and high school. She must have been sick to death of smearing peanut butter and globbing grape jelly onto that 1970’s era not-so-soft whole wheat bread. (and why didn’t I offer to make my own?…

I almost gave up on Bundt cakes altogether, but I sure am glad I didn’t cause this triple chocolatey cake sure was worth the wait!!…

Red, White and Blue Flatbreads
What’s the difference between pizza and flatbread? I wondered this myself and found through a little online “noodling” that there are no hard and fast rules for the two although some say a flatbread is usually: – Not round – Very thin – Flat all the way to the edge – Not covered in sauce…

Mmm…delicious moist chocolatey cake, studded with unmelted Oreos, topped with an Oreo crust, drizzled with icing and sprinkled with more Oreos. Ding, ding, ding – we have a winner!! My girls request this for their birthday cake every year!
Slow-Cooker Salsa Chicken Rice Bowl
This is one of our favorite easy weeknight recipes! We make it 1-2 times per month year round! Everyone loves it and it’s great for busy nights when everyone is eating at different times. Set up a toppings bar, and everyone can top their bowl with whatever they like. The chicken mixture freezes well too!

“Fennel – Olive – Feta – Frittata” – Say that 5 times fast! ( : I haven’t made a frittata in a while, but I was making a fennel and apple salad the other day and the fennel reminded me of a yummy frittata I had made a few years back. Do you like fennel? I…
