Grocery Store Out of Flour?
Mine too! I have a little flour stashed in the freezer, trying to save it for special projects (both my daughters’ birthdays are coming up!) So, I worked on a beer bread recipe that uses all oat flour. Maybe you have some oats in your pantry too!
How Do You Make Oat Flour?
Oat flour is one of the easiest flours to make yourself as rolled or old fashioned oats aren’t as firm as some other grains. You can “mill” it very easily in a chopper, food processor or blender!
I find it takes just a little more than 1 cup of old fashioned oats to make 1 cup of oat flour. I just measure my oats with a rounded 1-cup measure. Then, just blend or process until very fine. Make sure to measure again after milling. Note: I do sift the milled oat flour for this particular recipe to help keep the flour fluffy.
How to Make this Bread Gluten-Free:
Oat flour can be gluten-free if you use certified gluten-free oats to make it. Oats are inherently gluten-free, but they have to be processed in a plant where there is no cross-contamination with other grains.
To make this Oat & Cinnamon Beer Bread recipe completely gluten-free, make sure you use gluten-free beer and baking powder.
Oat flour has a different density level than traditional wheat flour, so you need to use a little more oat flour. My regular Cheesy Herb Beer Bread recipe uses 3 cups of all-purpose flour, but this recipe needs 4 cups of oat flour. So you need about 1 1/3 cups oat flour = 1 cup all-purpose flour.
How’s the texture?
If I had plentiful access to all-purpose flour, I would use a combination of flours to make this bread – as oat flour can make the loaf a little dense. I try to off-set the density by adding an egg and extra baking powder to the recipe. It ends up being a nice, hearty loaf of bread. It’s similar in texture to banana bread, minus the banana moisture.
What does it taste like?
We very much enjoyed it, especially with some butter and jam! The beer gives the loaf a slightly yeasty taste. The cinnamon pairs well with the oat flour which is a little sweeter tasting than all-purpose flour. It toasts up nicely too! Enjoy and stay well! Happy Baking!

Oat & Cinnamon Beer Bread (DIY Oat Flour, No Yeast)
Ingredients
- 4 cups sifted oat flour see note
- 1/2 cup old fashioned oats plus more for garnish
- 3 tablespoons granulated sugar
- 2 tablespoons baking powder see note
- 1/2 teaspoon salt
- 2 1/2 teaspoons cinnamon you can increase to 1 tablespoon for more cinnamon flavor
- 12 ounces beer see note
- 4 tablespoons melted butter divided
Instructions
- Arrange oven rack to lower center position - (so top of loaf will be in center of oven when baked.) Preheat oven to 400 degrees F. Grease bottom only of a 9-inch loaf pan
- I mix this by hand or with a hand mixer (dough hooks).
- In large bowl, stir together oat flour, oats, sugar, baking powder, salt and cinnamon. Pour in beer and stir just until all dry ingredients are mixed in. Try not to over mix.
- Pour batter into prepared pan and gently even out with spatula. Sprinkle top with some additional oats if desired. Place in oven and turn oven down to 375 degrees. Bake for 30 minutes. Then pour half the butter over the top of the loaf.
- Bake 20 more minutes, then pour the rest of the butter over the top of the loaf and continue baking for 5-10 minutes more. When done it will be golden brown, will resist when pressed lightly on the top. You can also check by inserting a toothpick into the top of the loaf, it should be clean or only have a few moist crumbs.
- Let cool in pan for 10 minutes. Loosen edges with thin knife. Remove from pan and cool for 30 minutes on cooling rack before slicing.
