Honey Extraction Day at Hillendale Apiary!
It had been about a month since our last visit to Hillendale Apiary and we couldn’t wait to go back, visit the bees (and puppies) and help with honey extraction! The forager bees had been busy collecting nectar and passing it on to the young worker bees who process it into honey.
Did you know that a honeybee out gathering nectar can hold 70mg in her honey stomach? That is about as much as the bee weighs herself. To fill that honey stomach a honeybee needs to visit 100-1500 flowers! (Lansing State Journal, 1997) In a season, a hive can produce between 25-70 pounds of honey depending upon the weather, location and strength of the hive. Laura and Tom had about 6 frames full of honey to extract from their hives on our visit.

Honey Kissed Blue Cheese Tartlets:
I love nibbling on the savory and sweet delights on a cheese board. Blue cheese drizzled with honey was the inspiration for this super quick, 6 ingredient, bite-sized tartlet.
Stir together cream cheese, blue cheese, pecans and chives. Mound into mini fillo cups. Bake. Sprinkle with chives and drizzle with honey. Simple & delicious!
Honey Kissed Fruit & Yogurt Tartlets:
Yogurt, honey and fresh fruit are a power trio. They are deliciously beautiful together! Add this power trio to a cute little crunchy mini fillo shell and I’m all in! What could be easier? Stir together Greek yogurt and honey, top with fruit, drizzle some honey – done!
Note: These little nibbles are best assembled right before you serve them so the fillo shell doesn’t get soggy.

Bee 101: Getting Sticky & Honey Kissed Tartlets
Ingredients
Honey Kissed Blue Cheese Tartlets
- 3 ounces cream cheese softened
- 3 ounces blue cheese crumbled
- 2 tablespoons pecans chopped
- 2 tablespoons chives sliced 1/4" pieces, divided
- 1 package frozen mini fillo shells
- 2 tablespoons honey
Honey Kissed Fruit & Yogurt Tartlets
- 3/4 cup Greek yogurt plain (I used 2%)
- 1/4 cup honey divided
- 1 cup fresh fruit (bite-size pieces)
- 1 package frozen mini fillo shells
- mint leaves for garnish if desired
Instructions
Honey Kissed Blue Cheese Tartlets
- Preheat oven to 350 degrees.
- In medium bowl, stir together cream cheese, blue cheese, pecans and 1 tablespoon chives.
- Arrange fillo shells on baking sheet and fill each with a rounded tablespoon portion of filling. You can mound them up a bit as they will melt down.
- Bake for 10-14 minutes (times may vary based on your oven) or until the filling is hot, melty and just starting to brown.
- Sprinkle cooked tartlets with remaining chives and drizzle each with a little honey, about ¼ to ½ teaspoon each.
Honey Kissed Fruit & Yogurt Tartlets
- Thaw fillo shells.
- In small bowl, combine yogurt and 2 tablespoons honey.
- Right before serving, spoon a rounded teaspoon of yogurt mixture into fillo shells.
- Top each with fruit and drizzle with remaining honey, about 1/4 -1/2 teaspoon each.
- Garnish with mint leaves if desired.
